Asada Co., Ltd. (株式会社アサダ) is a Japanese pickle and prepared-foods (tsukemono / sōzai) maker based in Nagoya, Aichi Prefecture. Founded in 1948, it began as a takuan (pickled-radish) wholesaler and now makes a broad range of pickles and prepared side dishes.
What is aji sansai (mountain vegetables)?
Sansai (山菜) means "mountain vegetables" — edible wild plants gathered in Japan's mountains and fields, strongly associated with spring and with snow-country regions. Aji sansai (味山菜) is a seasoned, ready-to-use mix of such vegetables that have been simmered and flavoured. "Warabi nuki" (わらび抜き) means the mix is made without warabi (bracken), one of the classic mountain vegetables that some people prefer to leave out.
How to use & enjoy
Commonly mixed through freshly cooked rice as sansai gohan (or takikomi gohan), used as a topping for soba and udon, served as a small side dish, or added to onigiri and ochazuke.
