What "hira-uchi soba" is
Soba (そば) are Japanese buckwheat noodles. "Hira-uchi" (ひら打ち) means flat-rolled / flat-cut — a broader, flatter strand than standard round-cut soba, which gives a slightly different bite and a good surface for holding tsuyu (dipping/soup base).
How to use & enjoy
