About Aoi Foods
Aoi Foods (有限会社葵フーズ) is a noodle house in Toyokawa, Aichi, founded in 2002 and trading under its own 「蔵夢工房」 (Kura Yume Koubou) brand name. It sources and specifies the wheat behind each of its lines and has its dried noodles made at an affiliated dry-noodle mill in Japan.
What cha soba is
Cha soba (茶そば) is soba — buckwheat noodle — with green tea worked into the dough. It carries the nutty, earthy character of buckwheat with a fresh, faintly grassy matcha note behind it, and cooks to a distinctive deep green. It is eaten the same ways plain soba is, and is especially popular served chilled, where the colour shows.
How to use & enjoy
Soba is boiled, then enjoyed one of two ways: chilled and dipped into a cold soy-and-dashi sauce, or hot in a noodle broth. Served cold as zaru soba, the drained noodles go on a bamboo tray with a cup of tsuyu for dipping, garnished with shredded nori and sliced spring onion. Served hot as kake soba, they sit in a light dashi, soy and mirin broth. Wasabi and sliced spring onion are the standard condiments either way, and tempura — prawn or vegetable — is the classic accompaniment.
