Aoi Foods (有限会社葵フーズ) is a noodle house in Toyokawa, Aichi, founded in 2002 and trading under its own 「蔵夢工房」 (Kura Yume Koubou) brand name. It sources and specifies the wheat behind each of its lines and has its dried noodles made at an affiliated dry-noodle mill in Japan.
What udon is
Udon (うどん) is the thick, soft, white Japanese wheat noodle — chewier and milder than soba, and the base of some of Japan's most everyday meals. Dried udon keeps in the pantry and cooks in a few minutes of boiling.
How to use & enjoy
Boil the noodles until tender, then serve them hot in a seasoned dashi broth or chilled with a cold tsuyu for dipping. The simplest hot bowl is kake udon — noodles in a mild dashi, soy and mirin broth with sliced spring onion. Kitsune udon adds sweet, deep-fried tofu pouches; curry udon serves them in a Japanese curry-flavoured broth. In summer, zaru udon puts the chilled noodles on a bamboo tray with dipping sauce. Drained and stir-fried with vegetables, meat or seafood in a soy-based sauce, the same noodles become yaki udon. Hot udon bowls are commonly topped with tempura, spring onion and fish cake.
