About Amijirushi
Ami Brand Food Industries (あみ印食品工業株式会社) is a Tokyo seasoning maker founded in 1952 in Asakusa, originally as Tokyo Kanmi Co., Ltd. and renamed Amijirushi in 1958. It works from Higashi-Tabata in Kita-ku, Tokyo, and makes Japanese, Western and Chinese-style soups, sauces and bottled goods — including the fried-rice seasoning it has sold since 1958.
What is bouillon, and how does it differ from dashi?
Bouillon (ブイヨン) is the Western-style stock vocabulary Japanese makers use for a savoury base built on vegetables or meat, as distinct from dashi, which is the Japanese stock tradition and is usually built on bonito and kelp. That difference is the practical one here: a vegetable bouillon carries no seafood base, so it sits closer to a Western vegetable stock cube than to a Japanese soup stock.
How to use & enjoy
Amijirushi's own directions are to empty one sachet into a bowl, pour in about 200 ml of hot water and stir lightly for a clear soup. The maker also gives it two other jobs: about one sachet per three to four servings in stews and curries, and as a seasoning base for stir-fried and fried dishes. More broadly, a vegetable stock like this is the foundation liquid for soups, stews and sauces.
