Ajinomoto Cook Do® Hoikoro (回鍋肉用) 90g is the finishing sauce for hoikoro — a Chinese sweet-savoury miso stir-fry of pork and cabbage. Ajinomoto builds it on miso pan-roasted until fragrant, then adds the deep umami of aged douchi (fermented black soybeans), which is what gives the sauce its savoury backbone. The maker's own recipe works from about 200 g of thinly sliced pork belly with a quarter of a large cabbage, two green peppers and half a leek, and serves 3–4. Soybean oil is made in Japan; the douchi, doubanjiang and tianmianjiang are manufactured in Thailand and elsewhere, and the sauce is produced at Ajinomoto Group factories in Kanagawa and Shizuoka, or at a partner factory in Mie.

What hoikoro is
Hoikoro (回鍋肉) is a Chinese stir-fry of pork and cabbage in a miso-based sauce. The name literally means "return-pot meat": the pork is cooked once, then returned to the pan to be stir-fried again with the sauce and vegetables — which is where the English name "twice-cooked pork" comes from.
How to make hoikoro — Ajinomoto's recipe
Serves 3–4, about 20 minutes. You will need about 200 g thinly sliced pork belly, 2 medium green peppers (about 40 g), a quarter of a large cabbage (about 300 g), and half a medium leek (about 40 g).
- Cut the cabbage into bite-sized pieces, the green peppers into bite-sized wedges, the leek diagonally into 1 cm slices, and the pork belly into 5 cm lengths.
- Heat 1 tablespoon of oil in the pan and stir-fry half the cabbage and green peppers, then transfer to a plate. Repeat with another tablespoon of oil and the remaining half.
- Stir-fry the pork belly and leek. Once the pork is cooked through, take the pan off the heat, add the Cook Do®, then return it to medium heat and stir-fry to coat.
- Return the cabbage and green peppers to the pan, toss everything together, and serve.
