What is doubanjiang?
Doubanjiang (豆板醤, tobanjan in Japanese) is a Chinese fermented paste made from broad beans and chilli. It is what gives Sichuan-style dishes their savoury, slow-built heat, and it is quite distinct from a fresh chilli sauce — the flavour comes from fermentation, not from raw chilli alone.
How to use & enjoy
Doubanjiang is a cooking seasoning rather than a table condiment: it goes into hot oil at the start of cooking, where its fragrance blooms and it colours the oil. It is the key seasoning in mapo tofu, and is also widely used in Sichuan-style stir-fries.
