Mizkan Ryorishu (料理酒) Cooking Sake 1L — Mizkan's standard Japanese cooking sake, made specifically for cooking rather than drinking. It is the salt-added style (加塩タイプ), brewed from rice with rice koji and lightly salted so that it is sold as a seasoning. The 1 L bottle is the larger of Mizkan's two retail sizes, alongside the 360ml.
About Mizkan
Mizkan (ミツカン) was founded in 1804 in Handa, Aichi Prefecture, where it is still headquartered, beginning as a vinegar brewer that used sake lees (sake-kasu) to make affordable rice vinegar — an innovation that helped popularise Edo-era nigiri sushi. Today Mizkan's range spans Ajipon (味ぽん) citrus ponzu, Honteri mirin-style seasoning, Oigatsuo and Konbu tsuyu noodle soup bases, rice and sushi vinegars, and Kinnotsubu natto.

How to use & enjoy
Cooking sake is added to marinades and to dishes as they cook, where it tenderises meat and helps eliminate strong odours, and where it lends umami and a natural sweetness to soups, simmered dishes and marinades. It is a standard ingredient in nimono (Japanese simmered dishes), one of the four components of teriyaki sauce alongside soy sauce, mirin and sugar, and the steaming liquid for sake-steamed asari clams.
