About Kobayashi Seimen
Kobayashi Seimen (小林生麺株式会社) is a noodle maker in Gifu, founded in 1947 and one of Japan's few specialists in rice-flour, gluten-free noodles — it produces around 130 varieties of Chinese-style noodles. Its rice-flour noodles carry an internationally recognised gluten-free certification, obtained in February 2015, and are made in an ISO-9001 certified factory.
Gluten-free, made from rice flour
These noodles are made with domestically grown Japanese rice flour (from Aichi Prefecture) in place of wheat, so they contain no gluten. The manufacturer declares that the product uses none of Japan's specified allergen ingredients (including wheat) and is produced in a factory dedicated to rice-flour noodles.
How to prepare (per Kobayashi)
Add the noodles to plenty of boiling water and cook for about 3 minutes, then combine with your choice of soup and toppings and enjoy.
