Ichibiki Dengaku Miso (田楽みそ) 120 g — a sweet miso glaze made with sesame, blending bean miso (mame miso) and rice miso with sugar. It is ready to use straight from the tub: no mixing, no thinning, no seasoning to balance.
About Ichibiki
Ichibiki Co., Ltd. (イチビキ株式会社) is a Nagoya miso, soy sauce and tsuyu maker whose brewing origins run back to 1772, incorporated in 1919 and trading under the Ichibiki name since 1961. It is known for the Tokai region's characteristic bean miso (mame-miso).
What dengaku is
Dengaku (田楽) is a Japanese preparation in which a sweetened miso glaze is spread over an ingredient — often skewered — which is then grilled or broiled so the miso lightly caramelises on the surface. Dengaku miso is the ready-made glaze that does the job, so the only work left is the grilling.
How to use & enjoy
Ichibiki suggests using it on seasonal produce, naming nasu dengaku (eggplant) and satoimo dengaku (taro). Two other preparations are equally standard:
-
Tofu dengaku — tofu coated in sweet miso and grilled.
-
Konnyaku dengaku — konnyaku, boiled and then glazed with the miso.
