Mizkan Kantan Su (カンタン酢 — literally "easy vinegar") is a ready-mixed Japanese seasoned vinegar: vinegar already balanced with sugar, salt, lemon juice and a vegetable-and-kombu stock, so nothing needs measuring or mixing. Mizkan's own framing is that one bottle covers sweet-vinegar pickles, sunomono, sushi rice, pickles, marinades and meat dishes, with no need to combine sugar and salt separately. 500 ml bottle.
About Mizkan
Mizkan (ミツカン) was founded in 1804 in Handa, in what is now Aichi Prefecture, when its founder — a sake brewer — began making kasu-zu, a vinegar brewed from sake lees. The company is still headquartered in Handa today.
What "seasoned vinegar" means
Seasoned vinegar — 調味酢 (chomi-zu) in Japanese — is vinegar sold pre-blended with sweetener and salt, as distinct from a plain rice or grain vinegar that you season yourself. The category exists for exactly the dishes where vinegar, sugar and salt would otherwise be measured out separately: sushi rice, vinegared salads and quick pickles.
Ingredients
Vinegar (brewed vinegar, rice vinegar, apple vinegar), fructose-glucose syrup (manufactured in Japan), sugar, salt, lemon juice, vegetable stock, kombu (kelp) stock / acidulant, seasoning (amino acids, etc.).
Allergens
Contains: apple (from the apple vinegar). No other allergen is declared by the manufacturer.
