What is Izumo soba (and tororo)
Izumo soba is one of Japan's three most famous soba styles, from the Izumo area of Shimane; the buckwheat is milled whole-grain (including the husk) for a darker colour and fuller flavour. Tororo is grated mountain yam — a sticky, mild topping and dough ingredient that adds smoothness and body to the noodle.
How to use & enjoy
Soba is enjoyed two classic ways: hot in a warm dashi-based broth (kake-style) or cold, rinsed and served with a chilled dipping sauce (zaru/mori-style). This variant leans into its yam content as tororo soba — soba topped with grated mountain yam, sometimes finished with a raw or hot-spring egg — a well-known dish and a traditional topping for Izumo soba in particular. Izumo soba is also served warigo-style, stacked in three lacquered tiers with condiments such as grated daikon, chopped green onion, shredded nori and bonito flakes. Tempura is a classic pairing.
