Kodama Seimen Co., Ltd. (有限会社児玉製麺) is an Izumo noodle maker in Shimane Prefecture, founded in 1919 and devoted to noodle-making for over a century — grown into one of the San'in region's Izumo-soba makers.
What is Izumo soba
Izumo soba is one of Japan's three most famous soba styles, from the Izumo area of Shimane. The buckwheat is milled whole-grain — including the husk — which gives the noodles a darker colour and a fuller, more aromatic soba flavour.
How to use & enjoy
Soba is enjoyed two fundamental ways: chilled with a separate dipping sauce (zaru soba), favoured in warmer weather, or hot in a soy-dashi broth (kake soba) in cooler weather. Cold soba is classically served with a soy-mirin-dashi dipping sauce (tsuyu) and condiments such as sliced scallion, wasabi, shredded nori and grated daikon; hot soba is often topped with tempura, sweet fried tofu (kitsune-style), or scallion and wakame. Izumo soba is traditionally served warigo-style — stacked in three round lacquered tiers, with the sauce poured directly over the noodles rather than offered as a separate dip.
