Kodama Shiraume Maru Udon 200g (白梅 丸うどん) — a thick, round (丸 maru) dried udon from Kodama Seimen, slow-aged for a smooth throat-feel and a firm body that holds up without falling apart. It's dried slowly from the centre outward over nearly a week in a drying room walled in hinoki (Japanese cypress), and was chosen to represent Shimane Prefecture at the "47 Men Market" event. Its long 18–20 minute boil time reflects the thick cut.

How to use & enjoy
Udon is served two classic ways: hot in a dashi-based broth (kake udon) or chilled with a separate dipping sauce (zaru udon). Its strong body also makes it well suited to stir-frying with vegetables and protein in a soy-based sauce (yaki udon) and to hot pot. Favourites include kitsune udon (topped with sweet soy-simmered fried tofu), tempura udon and curry udon. It's classically finished with sliced green onion, kamaboko fish cake, or a sprinkle of shichimi togarashi.
