What is cha soba
Cha soba (茶そば) is a variety of soba with green tea — here, matcha — worked into the buckwheat dough. It carries a gentle green-tea fragrance and a pale green colour, and is enjoyed the same ways as regular soba, hot or cold.
How to use & enjoy
Soba is served two classic ways: chilled with a cold dipping sauce, especially in warmer months, or hot in a dashi-based broth in cooler months. Zaru soba (chilled noodles on a tray, dipped in cold soy-dashi tsuyu) shows off cha soba's colour and aroma particularly well; kake soba is the everyday hot bowl, and tempura soba pairs it with shrimp or vegetable tempura. Cha soba also works as a cold noodle salad tossed with fresh vegetables and a light sesame, ponzu or miso dressing. Traditional condiments are sliced spring onion, freshly grated wasabi, grated daikon and shredded nori.
