What oden is
Oden (おでん) is Japan's classic winter hot pot — a one-pot dish, or nabemono, in which an assortment of ingredients is simmered slowly in a light dashi-and-soy broth until each has taken on the flavour of the stock. It is sold everywhere through the colder months, from street stalls and izakaya to convenience-store counters, and it is a dish defined as much by its broth as by what goes into it.
How to use & enjoy
An oden soup base is dissolved in water to make the broth, and the ingredients are then simmered in it. The classic additions are daikon radish, boiled eggs, konnyaku and an assortment of fishcakes. Oden is traditionally served with a small dab of Japanese karashi mustard on the side.
