Ajinomoto Umami Seasoning — 「味の素®」 — in the 70 g shaker bottle with the AJI-PANDA® character cap. Ajinomoto describes it as a seasoning that brings out umami, built on glutamic acid, the amino acid behind the umami of kombu, and usable right through cooking from prep to finishing. It is made by fermentation: sugarcane molasses is fermented to produce glutamic acid, which is crystallised as sodium glutamate and then combined with sodium inosinate and sodium guanylate. Ajinomoto notes this is the same fermentation method used to make miso, soy sauce and sake. Contents are produced at Ajinomoto's Kyushu Plant in Saga, and filled and packed at Ajinomoto Foods' Kawasaki plant in Kanagawa.

What umami seasoning is
Umami is the savoury fifth basic taste, alongside sweet, sour, salty and bitter. Its principal compound is glutamate, which occurs naturally in kombu kelp, tomatoes, aged cheeses and cured meats. An umami seasoning delivers that compound directly, in a crystalline form that dissolves into a dish — which is why it is measured in shakes rather than spoonfuls.
How to use & enjoy
Monosodium glutamate is a savoury flavour enhancer, added to soups and stews. Rather than contributing a flavour of its own, a small amount amplifies the savoury depth already present in the food. It is typically used alongside table salt, working in a comparable way to lift how a dish's flavour reads overall.
