About S&B Foods
S&B Foods (エスビー食品株式会社) was founded in 1923 by Minejiro Yamazaki, who produced Japan's first domestically-made curry powder; in 1970 S&B introduced Japan's first tubed condiment, pioneering the squeeze-tube format now standard for wasabi, karashi and ginger.
What's karashi
Karashi (からし) is Japanese hot mustard — noticeably sharper and more pungent than Western table mustard, and without its sweetness or vinegar tang. "Wafu" (和風) simply means "Japanese-style".
How to use & enjoy
Because it's so much hotter than Western mustard, karashi is used sparingly as a condiment rather than spread on thickly or cooked into a dish. It's a classic partner for oden (the simmered one-pot stew), nattō (fermented soybeans), and tonkatsu, and a standard dipping condiment for gyoza and shumai dumplings. It's also blended into other condiments — with mayonnaise, or with vinegar and miso for karashi-su-miso — to make tangy dressings and dips for vegetables, poultry and seafood.
