Foodservice steel tin (S缶), 110 × 54 mm, with sprinkle/shaker holes (no removable rotating lid) — one of six pack sizes in S&B's Select Spice sansho line (L缶 250g, M缶 150g, S缶 65g, plus 1kg / 500g / 100g bags). Packed in Japan at S&B's Higashimatsuyama plant, Saitama. The 65g tin is far larger than the common 8–12g retail bottles — a working-size tin for restaurants and keen home cooks.

What's sansho (and kasanshō)
Sansho (山椒) is the ground berry husk of the Japanese prickly-ash — citrus-aromatic, with a tingling, numbing sensation on the tongue quite unlike black pepper. Kasanshō (花椒) is its close Chinese cousin, Sichuan pepper, which brings a stronger numbing (má) kick; both belong to the same prickly-ash (Zanthoxylum) family.
How to use & enjoy
Sansho-family pepper is a finishing spice — sprinkled over a dish just before serving or at the table, rather than cooked in, so its citrus aroma and tingle stay lively. Its classic home is dusted over grilled eel (unagi kabayaki / unadon) and offered as a table condiment for yakitori. More broadly it seasons grilled meat, fish and seafood, and lifts rice, noodles and hot-pot (nabemono) dishes.
