What is wasabi powder
Wasabi powder is dried, ground wasabi (and, in mass-market blends, horseradish), reconstituted with water into a fresh-style paste at the moment of use. Making it fresh gives a brighter, sharper heat than pre-made tube paste and lets you mix only as much as you need.
How to use & enjoy
To prepare (per S&B): put 5 teaspoons of powder in a small cup, add 3 teaspoons of water, mix well, then turn the container upside down and wait 1 minute for maximum heat. Use the fresh paste as the classic condiment for sushi and sashimi — in nigiri a small dab is traditionally placed between the fish and the rice rather than stirred into the soy sauce — and as a partner to soy sauce for dipping. It's also a standard condiment for soba noodles, especially cold zaru soba, stirred a little at a time into the tsuyu dipping sauce.
