What's oden
Oden (おでん) is Japan's classic winter hot pot — an assortment of daikon radish, konnyaku, boiled egg and fishcakes (chikuwa, hanpen) simmered slowly in a light soy-and-dashi broth. It's a warming one-pot dish sold everywhere from street stalls and izakaya to convenience stores through the colder months.
How to use & enjoy
Dissolve the granules in hot water to make the oden broth, then simmer your chosen ingredients — daikon, boiled eggs, konnyaku and assorted fishcakes — until they soak up the flavour. The same granulated stock also works as an instant broth base for other hot-pot (nabemono) dishes and for udon and soba noodle soups. Oden is traditionally served with karashi (Japanese hot mustard) on the side.
