What is Japanese curry roux
Japanese curry roux is a solid block of seasoned curry base — fat, flour, curry spices and savoury seasonings pressed into cubes. You simmer meat and vegetables, then dissolve the cubes in to make a thick, glossy Japanese curry sauce.
How to use & enjoy
Curry roux is a cooking ingredient rather than a ready-to-eat sauce: the solid block is melted into a simmering pot of meat, vegetables and stock, where it thickens the liquid into a rich Japanese-style curry sauce. The finished sauce is classically ladled over steamed white rice as karē raisu — one of Japan's most common everyday home-cooked meals.
The same roux is behind several Japanese favourites: katsu curry, with a crumbed, deep-fried pork or chicken cutlet on curry rice; curry udon, thick udon noodles in a curry-flavoured broth; and kare pan, the panko-crumbed, deep-fried curry bun sold in bakeries and convenience stores. Curry rice is traditionally served with a side of tangy Japanese pickles — most iconically fukujinzuke, a sweet-and-sour red relish — to cut through the richness of the sauce.
