What's yuzu kosho
Yuzu kosho (柚子こしょう) is a Kyushu-region condiment paste of yuzu citrus peel, green (or red) chilli and salt — sharp, citrus-aromatic and chilli-warm. It's used sparingly as a finishing seasoning rather than a sauce.
How to use & enjoy
Yuzu kosho is potent, so it's used in small amounts — stirred in or added as a finishing dab. It's a classic condiment for nabe (Japanese hot pot), stirred into the broth or the dipping sauce, and it's served alongside sashimi and tempura, where its citrus heat cuts through richness. It's also commonly used to season yakitori and grilled meats, and to add a citrus-chilli kick to noodle dishes such as udon and ramen and to miso soup.
