What is kiriboshi daikon zuke?
Kiriboshi daikon (切り干し大根) is daikon radish cut into strips and dried — a traditional Japanese technique that concentrates the radish's natural sweetness and savoury depth. Pickled (zuke, 漬), it becomes a crisp tsukemono eaten in small amounts as part of a meal. The dried-daikon growing area around Tano-cho and Kiyotake-cho was recognised as a Japan Agricultural Heritage site (日本農業遺産) in 2021.
How to use & enjoy
Tsukemono like this are eaten straight from the pack, served in small amounts alongside plain steamed rice as part of a Japanese meal. Michimoto also suggests it as a side to a main dish or as a nibble with drinks.
