Michimoto Hinatazuke Whole Sun-Dried Takuan 270g is a single whole daikon radish, sun-dried and then pickled to the deep gold of a traditional takuan. It arrives as one uncut radish rather than ready-sliced, so you cut it exactly as you want it. Michimoto makes no colourings or preservatives part of it, and says so on the pack — which is also why the shade varies a little from one radish to the next.
The drying is the point. Michimoto hangs Miyazaki daikon outdoors on open yagura racks under the region's winter sky, and its own account is direct about why: drying is what builds the radish's umami and its texture. The company has made sun-dried takuan under the Hinatazuke (日向漬) name for more than fifty years, and the dried radish in this pack is grown in Miyazaki Prefecture.

Michimoto Foods Co., Ltd. (道本食品株式会社) is a Miyazaki pickle maker founded on 1 September 1937, with its head office and factory in Tano-cho, Miyazaki City. Its business is the manufacture and sale of pickles, and it presents two product lines: sun-dried takuan and dried vegetables.
What is takuan?
Takuan (たくあん) is Japan's traditional pickled daikon radish — golden, crisp and faintly sweet, and one of the standard tsukemono set out with a meal. Traditionally the radish is dried before it is pickled, which is what gives takuan its concentrated flavour and its firm, snapping texture.
How to use & enjoy
Michimoto's own direction is to eat it as it comes, without washing, sliced as thinly as you can manage — around 2–3 mm. Beyond that, takuan is usually served as a side dish with a Japanese meal; it also turns up as a filling in sushi rolls, and it is a common bento item. Once opened, Michimoto asks that you keep it in the refrigerator and eat it soon.
