Michimoto Kizami Tsubozuke (Chopped Pickled Radish) 120g is a crisp daikon pickle that arrives ready-chopped. Michimoto makes it from cold-dried daikon and finishes it so the soy-sauce sourness and the sweetness sit in balance, leaving a firm, pleasant bite; a little chilli goes into the pickling liquid. Michimoto states on the pack that no preservative is used.
The radishes are grown in Miyazaki Prefecture and dried before they are ever pickled — a step Michimoto says deepens both the umami and the texture. From December to February the fields around Tano-cho in Miyazaki City fill with wooden yagura racks, where the daikon hangs in the open air for about two weeks under the region's strong winter sun and the cold Kirishima-oroshi wind coming off the mountains. In February 2021 the Tano and Kiyotake districts — Michimoto's birthplace and the heart of that dried-daikon growing — were recognised as a Japan Heritage Agricultural Site by Japan's Minister of Agriculture, Forestry and Fisheries.

Michimoto Foods (道本食品株式会社) is a pickle maker founded in 1937 at Tano-cho in Miyazaki City, where its head office and factory still stand. Its two product lines are sun-dried takuan and dried vegetables.
What is tsubozuke?
Tsubozuke (つぼ漬) is a Kyushu pickle of dried daikon radish cured in a soy-sauce seasoning; the name refers to the tsubo (壺), the earthenware pot it was traditionally pickled in. "Kizami" (きざみ) means it comes cut up ready to serve, rather than as a whole radish you slice yourself.
How to use & enjoy
Tsukemono like this are eaten as a small side dish with a bowl of plain rice. Because it is already chopped, it also works in onigiri rice balls, and it packs easily into a bento. A few pieces alongside a meal refresh the palate.
