About Michimoto
Michimoto Foods (道本食品株式会社) is a tsukemono maker founded in 1937, with its head office and factory at Tano-cho in Miyazaki City. It works through a network of contract growers and pickles its entire output in-house; the dried-daikon growing area around Tano-cho and Kiyotake-cho was recognised as a Japan Agricultural Heritage site in 2021.
What is kiriboshi daikon zuke
Kiriboshi daikon (切り干し大根) is daikon radish cut into strips and dried — a traditional Japanese technique that concentrates the radish's natural sweetness and savoury depth. Pickled (zuke, 漬), it becomes a crisp tsukemono eaten in small amounts as part of a meal.
