What's hachiwari
Hachiwari (八割) means an "eight-parts" blend — about 80% buckwheat flour to roughly 20% wheat. The high buckwheat proportion gives a pronounced, nutty buckwheat aroma, while the wheat binds the noodle for a firm, clean bite — the balance prized for good-quality soba.
How to use & enjoy
Soba is served chilled as zaru soba — cooked, rinsed cold for a firm springy texture, and dipped in a soy-and-dashi mentsuyu — or hot as kake-soba in a light dashi broth. With no added salt in the noodle, the seasoning comes from the dipping sauce or broth. Classic condiments are wasabi, chopped green onion, and shredded nori.
