About Itohkyuemon
Itohkyuemon (伊藤久右衛門) is a long-established tea house from Uji, Kyoto — the heartland of Japan's finest green tea — with a tea business dating back to 1832 (late Edo period). It's known for premium Uji tea and matcha confectionery, and it selected the Uji matcha used in this soba: a real provenance collaboration, not a commodity flavouring.
About Nisshin Seifun Welna
The soba itself is made by Nisshin Seifun Welna (日清製粉ウェルナ) — the consumer-foods company of the Nisshin Seifun milling group and a major maker of home-use flour, cooking pre-mixes, Ma-Ma (マ・マー) pasta, and dried noodles. (Note: "Nisshin" 日清製粉, double-s, is a separate company from "Nissin" 日清食品, single-s.)
What's cha-soba
Cha-soba (茶そば) is green-tea soba — buckwheat noodles blended with green tea (here, Uji matcha) — giving a pale-green colour and a fragrant tea character alongside the nutty buckwheat. It's enjoyed both chilled and hot.
How to use & enjoy
Soba is served chilled as zaru soba — cooked, rinsed cold for a firm springy texture, and dipped in a soy-and-dashi mentsuyu — or hot as kake-soba in a light dashi broth. Classic condiments are wasabi, chopped green onion, and shredded nori.
