About Marutai
Marutai (株式会社マルタイ) is a Fukuoka-based noodle maker famous for the "bo ramen" (棒ラーメン) format — straight, non-fried stick noodles in a long cellophane wrap. Marutai launched the original instant stick ramen in 1959 and is known as its originator. Its Regional Series recreates ramen styles from across Japan, each built on the broth tradition of its home city.
The Kumamoto style — kuro mā-yu
Kumamoto tonkotsu is defined by mā-yu (マー油) — "black garlic oil." Garlic is fried in lard and vegetable oil until it blackens, then ground to a paste. Marutai builds a rich, solid pork-extract garlic tonkotsu broth and finishes it with this special black mā-yu — the hallmark of Kumamoto ramen.
