Shoda Shoyu Co., Ltd. (正田醤油株式会社) was founded in 1873 and is headquartered in Tatebayashi, Gunma Prefecture. It brews soy sauce and makes processed seasonings.
What is saishikomi soy sauce?
Saishikomi (再仕込み) soy sauce is made by mixing the koji with soy sauce instead of the salt water used for ordinary soy sauce. It comes out darker and more strongly flavoured.
How to use & enjoy
Shoda recommends it for everything from dipping and drizzling to cooking. Saishikomi soy sauce is mainly served at the table, with sashimi and sushi.
