What is warishita?
Warishita (わりした) is the seasoned sauce that Kanto-style sukiyaki is simmered in, made from soy sauce, sugar and mirin, often with sake and dashi.
How to use & enjoy
Sukiyaki is a hot pot cooked at the table in a shallow pan: thinly sliced beef, tofu, shirataki noodles, negi (long green onion), mushrooms and leafy greens such as shungiku (chrysanthemum greens) are simmered in the warishita. Each piece is traditionally dipped in beaten raw egg, and udon is sometimes added at the end to soak up the broth.
