About Marutomo
Marutomo Co., Ltd. (マルトモ株式会社) was founded in 1918 in Iyo, Ehime Prefecture, where it is still headquartered. It makes bonito flakes, dried sardines (niboshi), dashi stocks and noodle soup bases.
What is shirodashi?
Shirodashi (白だし, "white dashi") is liquid dashi seasoned with white or light-coloured soy sauce. It is a concentrate, diluted with water to suit the dish, and it seasons food without dulling the colour of the ingredients.
How to use & enjoy
Marutomo recommends it for clear soups, thick rolled omelette (atsuyaki tamago), oden and hot pots, and simmered dishes.
