What "surume somen" means
Surume (するめ) is dried squid, a classic Japanese chinmi (珍味, savoury delicacy) eaten as an otsumami — the small snacks enjoyed alongside beer, sake or whisky. "Somen" borrows the name of Japan's fine wheat noodles to describe the cut: the squid is shredded into slender, noodle-like strands rather than left in wide strips.
