Daisho builds the flour on katsuobushi and kombu umami and works in potato flake and yam powder, which is what gives the finished pancake its mochi-mochi chew rather than a plain crisp batter. About Daisho
Daisho Co., Ltd. (株式会社ダイショー) is a Japanese seasoning maker established in December 1966 in Fukuoka — originally as Daisho Foods, set up to make grilled-meat seasoning, and its very first product was a yakiniku sauce called Yakiniku Ichiban. What is chijimi?
Chijimi (チヂミ) is the Japanese name for the Korean savoury pancake known in Korea as buchimgae or jeon — a batter pan-fried in oil until the edges are crisp and the middle stays soft and chewy. It is eaten as a side dish, a starter or a snack rather than as a sweet, and a spring-onion version like this one is among the most common. Japanese supermarkets shelve the kits beside the vegetables, since a bunch of spring onion or garlic chives is the only thing you need to add.
How to make Negi (Nira) Chijimi — Daisho's recipe
Makes 2 pancakes (2–3 servings). You will need 1 stalk of long spring onion (about 150g) or 1 bunch of garlic chives (about 100g), 4 tablespoons of sesame oil (about 48g), this kit, and 200ml (1 cup) of water.
- Slice the spring onion thinly on the diagonal; or cut the garlic chives into 5cm lengths.
- Combine the spring onion (or chives), the chijimi flour and the water in a bowl and mix well.
- Heat 2 tablespoons of sesame oil in a frying pan, spread half the batter across the whole pan, and cook over medium heat for about 3 minutes — watch that it does not catch.
- Turn it over and cook until both sides are crisp. Repeat with the remaining batter.
Serve dipped in the seasoned sauce. If you like it hot, stir the spicy miso sauce into the seasoned sauce. Daisho's own tip: as you turn the pancake, drizzle another tablespoon of sesame oil around the rim of the pan for a more fragrant, crisper finish.

Spicy miso sauce: Miso (made in Japan), starch syrup, brewed vinegar, sugar, salt, red chilli, processed garlic, ginger, doubanjiang, sesame oil / alcohol, spice extract, thickener (xanthan), antioxidant (vitamin C), paprika colour.
