What is rice koji?
Rice koji (米こうじ) is steamed rice cultured with the koji mould Aspergillus oryzae. The mould's enzymes break starch down into sugars and protein into amino acids.
How to use & enjoy
This koji is made for miso, amazake and pickles, bettara-zuke among them. Amazake is a naturally sweet rice drink made with rice koji and served warm or chilled.
