About Shinsyu-Ichi
Shinsyu-Ichi Miso (神州一味噌) brews in Suwa, Nagano — the heart of Japan's Shinshu miso country. The company's own history dates its miso brewing to 1916, and it registered the 神州一 trademark in 1938.
What is shiro (white) miso
Miso is graded by colour, and "shiro" means the pale end of that scale. White miso is made with a high proportion of rice koji, which gives it a milder, sweeter character than the dark red misos — it is the one to reach for when you want the miso to season a dish rather than dominate it.
