Koga Seicha Honpo Co., Ltd. (株式会社古賀製茶本舗) is a tea manufacturer in Yame, Fukuoka, founded in 1819 and now run by the ninth generation of the Koga family. The company specialises in Yame tea — manufacturing, wholesale and retail — and holds Organic JAS, Kosher and HACCP certifications at company level.
What is sencha?
Sencha (煎茶) is the everyday green tea of Japan and by far its most widely drunk — leaves that are steamed soon after picking, then rolled and dried, which is what gives Japanese green tea its grassy, savoury character rather than the toastier profile of pan-fired Chinese green teas. It is sold as loose leaf rather than in bags for the same reason coffee is sold as beans: the leaf opens as it steeps.
How to use & enjoy
Sencha is brewed with hot water well below boiling — around 70–80°C — because water at a full boil pulls harsh bitterness and astringency out of the leaf.
