About Michimoto
Michimoto Foods (道本食品株式会社) is a pickle maker founded in 1937 at Tano-cho in Miyazaki City, where its head office and factory still stand. It makes sun-dried takuan and dried vegetables, and holds FSSC 22000 food-safety certification.
What is takuan?
Takuan (たくあん) is Japan's traditional pickled daikon radish — golden, crisp and faintly sweet, and one of the standard tsukemono set out with a meal. What makes this one particular is the drying: Michimoto hangs the daikon outdoors on open yagura racks between December and February, leaving it about two weeks in Miyazaki's generous winter sun and the cold Kirishima-oroshi wind coming down off the mountains.
How to use & enjoy
Michimoto's own direction is to eat it as it comes, without washing, sliced as thinly as you can manage — around 2–3 mm. Beyond that, takuan is usually served as a side dish with a Japanese meal; it also turns up as a filling in sushi rolls, and it is a common bento item. Once opened, keep it refrigerated and eat it soon.
