Ajinomoto Hondashi® Bonito Dashi Stock (Granulated) 120g is the classic Japanese household dashi stock, in a 120 g box. It is made from three types of katsuobushi (bonito flakes), each chosen for aroma, umami depth and flavour. The granules dissolve instantly — there is no infusing or straining — and at Ajinomoto's standard dosing of about 1 g per 150 ml of water (2 g per 300 ml), a 120 g box makes roughly 120 servings.
About Ajinomoto
Ajinomoto (味の素株式会社) has been trading since May 1909 and was incorporated in December 1925. Hondashi (ほんだし) is its bonito dashi range, sold alongside ranges such as Cook Do® — the company's line of Chinese-style blended seasonings.
What dashi is
Dashi is the basic Japanese cooking stock, and it is what gives Japanese food much of its savoury depth. Granulated instant dashi like this dissolves in hot water, rather than being simmered from bonito flakes and kombu.
How to use & enjoy
Dashi is used for miso soup, and as the stock for simmered dishes (nimono).
Ingredients
Salt (produced in Japan), sugars (sugar, lactose), flavour ingredients (bonito powder, bonito extract), yeast extract, yeast-extract fermented seasoning / seasoning (amino acids etc.).
Allergens
Contains: milk and fish (bonito). The milk comes from the lactose in the seasoning; bonito (katsuobushi) is a fish. On Ajinomoto's Japanese label milk is the only declared allergen — fish is not one of Japan's mandatory allergens — but this product is made from bonito, so we declare fish for anyone with a fish allergy.
