Shimaya's Dashitennen (だしてんねん) is a teabag-style Japanese dashi pack that draws a proper clear stock in minutes. Each sachet blends five umami sources — bonito (katsuo), kombu, roasted flying fish (ago), shiitake and dried sardine — and Shimaya makes it with no added salt and no amino-acid seasonings: the pack holds six dashi ingredients and nothing else. About Shimaya
Shimaya Co., Ltd. (株式会社シマヤ) is a Yamaguchi seasoning maker founded in 1890 as a miso brewer and incorporated in 1950; it launched Japan's familiar "dashi no moto" stock powder in 1964, and has been part of the Toyo Suisan group since 2011.
What is dashi?
Dashi (だし) is the foundational Japanese stock that underpins most of the cuisine — a light, clear broth built on umami rather than long-simmered bones. A dashi pack is the teabag format: the ingredients come ready-measured in a permeable sachet, so the stock is drawn without straining loose flakes and kelp afterwards.
How to use & enjoy
A dashi pack is steeped in hot water to draw out the stock, which then becomes the base for other dishes rather than being served on its own. Dashi is the base of miso soup, the broth for noodle dishes such as udon and soba, and the simmering liquid for nimono — Japanese simmered dishes of vegetables, tofu and fish.

Sardine bushi (made in Japan and Indonesia), dried baby sardines (niboshi), bonito flakes (katsuobushi), roasted flying fish (ago), kombu kelp (coarsely crushed), dried shiitake mushroom (coarsely crushed).

Shimaya declares that none of Japan's 28 specified allergen substances are used in this product — that list covers egg, milk, wheat, soy, sesame, peanut, walnut, almond, cashew and macadamia, among others. Fish is declared above because Australian labelling requires it and Japan's specified-allergen list does not cover fish in general.
