Ajinomoto Hondashi (ほんだし®) 60g is the granulated bonito stock that stands behind a great deal of everyday Japanese cooking. Ajinomoto makes it with three different types of katsuobushi — dried, fermented bonito — each chosen for what it does best: one for aroma, one for richness (コク), and one for taste. The granules dissolve straight into hot water, so a proper dashi base takes seconds rather than the usual steeping and straining. Ajinomoto's own nutrition panel is quoted per 1 g, the amount for a single bowl of miso soup, which gives a sense of how little it takes. This is the 60 g bottle.
Ajinomoto states where it is made, in two steps: the contents are produced at Ajinomoto Foods' Kawasaki plant in Kanagawa or its Mie plant, and the filling and packaging is done at the Kawasaki plant. The salt is domestically produced.
About Ajinomoto
Ajinomoto (味の素株式会社) began trading in May 1909 and was incorporated in December 1925. Hondashi (ほんだし) is the company's Japanese-stock range, sitting alongside ranges such as Cook Do® — its 中華合わせ調味料, or Chinese-style blended seasonings.
What dashi is
Dashi is the basic Japanese cooking stock — the savoury liquid foundation that most Japanese soups, simmered dishes and noodle broths are built on. It is traditionally made by steeping ingredients such as katsuobushi (dried bonito) and kombu seaweed in hot water. Granulated dashi like this one gives the same starting point without the steeping step.
How to use & enjoy
Instant dashi granules are dissolved in hot water, or added to a dish as it cooks, to produce Japanese soup stock — the savoury base of miso soup and other Japanese soups. That same stock is what noodle broths are built on, along with clear soups and simmered vegetable dishes (nimono). Combined with soy sauce and mirin, dashi also becomes the base for the dipping sauces served with cold noodles and with tempura.
