What aosa is
Aosa (アオサ) is a green seaweed of the genus Ulva, called sea lettuce or green laver in English. It is dried and ground to a fine powder that is used as a seasoning rather than eaten on its own. It is a close relative of aonori and the two are often confused, but they are different seaweeds.
How to use & enjoy
Aosa is a seasoning seaweed, valued for its ocean fragrance and its colour, and it is mixed into a dish rather than eaten by itself. It is a traditional addition to miso soup and clear soups, where it lifts both aroma and colour.
It is also worked into batters and mixtures: stirred through tempura batter for the seaweed-scented style known as isobe-age, folded into tamagoyaki (Japanese rolled omelette), and stirred through pasta as a seasoning.
