About Shinshin
Shinshin Foods (株式会社新進) is a Tokyo-headquartered Japanese food manufacturer founded in 1894 and incorporated in 1940. It began making wheat gluten and starch, and today builds its business around vegetables — pickles above all, alongside seasonings, wheat starch and protein, and chilled potato products — from three factories in Japan with around 470 staff.
What is fukujinzuke?
Fukujinzuke (福神漬) is a soy-based Japanese pickle of finely cut vegetables — daikon, eggplant, lotus root and cucumber are typical — cured to a sweet-savoury, faintly crunchy relish. Its name nods to the Seven Lucky Gods, one for each vegetable traditionally used. In Japan it is inseparable from curry rice: almost every plate of curry comes with a spoonful of it on the rim.
How to use & enjoy
Spoon it onto the side of a plate of Japanese curry rice. Its sweet-sharp crunch is there to cut against a rich, slow-simmered curry.
