About Myojo Foods
Myojo Foods (明星食品) is a major Japanese instant-noodle manufacturer, founded 1950 and now owned by Nissin Holdings. The flagship Charumera (チャルメラ, since 1966) bag-ramen line takes its name from the charumera horn played by traditional Japanese ramen-cart vendors. The Ippeichan BIG daze! large-cup line and the premium Chuka Zanmai (中華三昧) Chinese-restaurant cup line round out the Myojo portfolio.
The Hakata style
Hakata (博多) is the historic merchant district of Fukuoka in northern Kyushu, the birthplace of tonkotsu (pork-bone) ramen. Hakata-style ramen is characterised by a thin, firm, low-water-content noodle served in a cloudy, rich pork-bone broth — designed to be eaten quickly while the noodles retain their bite.
Charumera (チャルメラ) is Myojo's flagship bag-ramen brand, launched in 1966. The current lineup uses dashi made from 100% Hokkaido scallop (ホタテ) for umami depth — a flavour layer carried into the Tonkotsu variant.
