About Akai Boushi
Akai Boushi (赤い帽子, "Red Hat") is a Japanese gift-confectionery brand whose company was established in 1985 at Yugawara in Kanagawa. Its individually wrapped cookies and wafer sandwiches are baked by Tivoli Confectionery at plants in Kanagawa and Yamanashi.

Kukkia (クッキア) is Akai Boushi's range of sandwich sweets — whipped chocolate cream between a thin crisp cookie and a light, crisp gaufrette wafer.

Quasi-chocolate (made in Japan), liquid egg white, sugar, gaufrette (wheat flour, waxy corn starch, other), wheat flour, butter, almond powder, cream, shortening, dried egg white, dried processed strawberry, edible fats and oils, green tea (gyokuro, matcha), salt, raspberry powder / emulsifier, leavening agent, colouring (caramel), flavouring, thickener (polysaccharide), acidity regulator.
Speckles in the cookie are almond skin, from the peel-on almond powder.
