How to use & enjoy
Tempura batter is the light, crisp coating for deep-fried vegetables and seafood. Beyond individual pieces it makes kakiage — julienned vegetables, often with seafood, bound in a thin batter and fried as a fritter — and tops a tendon, the rice bowl served with a sweet-savoury sauce. Tempura is classically eaten with tentsuyu, a dipping sauce of dashi, soy sauce and mirin, with grated daikon added.
