Nisshin Seifun Welna Inc. (株式会社日清製粉ウェルナ) is the household-foods company of the Nisshin Seifun Group, one of Japan's largest flour millers. What is takoyaki
Takoyaki ("octopus balls") is a popular Osaka street food — a savoury wheat-flour batter cooked in a special half-sphere pan around pieces of octopus, then turned into round balls, crisp outside and molten-soft inside.
Nisshin's official takoyaki recipe
Makes about 60 pieces. Batter: Nisshin Takoyaki Flour 300 g (3 cups), 2 eggs, water 900 cc (4½ cups). Fillings (to taste): boiled octopus about 200 g, spring onion, tenkasu (tempura bits), beni-shoga. Toppings (to taste): sauce, mayonnaise, bonito flakes, aonori.
- Cut the boiled octopus a little large (it shrinks when cooked); coarsely mince the beni-shoga.
- Whisk the flour, eggs and water together into a batter.
- Oil a takoyaki pan preheated over high heat and pour the batter generously into the holes (overflowing is fine).
- Add the octopus, then the beni-shoga, tenkasu and spring onion.
- After 1–2 minutes, once the edges turn yellow, use a pick to gather the overflow batter into the holes; cook about 1 more minute until puffed.
- When the batter starts to set, turn each ball around along the hole with the pick (half-turn first to make flipping easier); add a little oil or extra batter if needed.
- When golden brown, plate and top with sauce, aonori, bonito flakes and mayonnaise to taste.
