shoda-nidan-jukusei-soy-sauce-1-8l
Shoda Nidan Jukusei Double Fermented Soy Sauce 1.8L

Shoda Nidan Jukusei Double Fermented Soy Sauce 1.8L is a whole-soybean shoyu brewed through twice. In the second fermentation Shoda uses raw soy sauce in place of the salt water a standard brew would use — the method Japanese brewers call saishikomi — and the result is a sauce with an elegant aroma, a deep colour and a rich, rounded flavour. Shoda recommends it as a dipping and pouring soy sauce, where that aroma isn't cooked away. This is the 1.8 litre bottle.

About Shoda

Shoda Shoyu Co., Ltd. (正田醤油株式会社) has been brewing soy sauce in Tatebayashi, Gunma since December 1873, and was incorporated in December 1917. It brews soy sauce and develops and manufactures processed seasonings, and today employs around 470 people.

What "double fermented" means

Most Japanese soy sauce is brewed once: the koji is fermented in salt water. In the saishikomi (再仕込み) or double-fermentation method, the koji is fermented in finished raw soy sauce instead — so the sauce is effectively brewed through a second time. It is slower and more expensive to make, and it is what gives this style its darker colour, fuller body and more concentrated aroma. Soy sauces made this way are usually kept for finishing and dipping rather than long cooking.

Ingredients

Water, soybeans, wheat, salt, alcohol.

Allergens

Contains: Wheat (gluten), Soybean.

Please refer to the package for the allergen declaration as printed for the Australian market.

Nutrition (per 100 g, as published by the manufacturer)

Energy: 79 kcal

Protein: 9.1 g

Fat: 0 g

Carbohydrate: 11.1 g

Shoda also publishes moisture 64.8 g and ash 15.0 g per 100 g, and a standard analysis of 16.2% salt (w/v) and 1.85% total nitrogen (w/v).

Important — please check the package label

While we make every effort to keep product information accurate and up to date, manufacturers may change formulations, packaging, allergens, ingredients, or specifications without notice.
