Michimoto's "Tsubu Mustard Takuan" is made using sun-dried daikon radish from Miyazaki Prefecture. The drying process enhances the flavor and texture of the radish, resulting in a truly unique and delicious takuan. While many brands now use fresh daikon radish, we pride ourselves on sticking to the traditional method of sun-drying the radishes in the winter sunshine of Miyazaki and the cold winds of Kirishima. In fact, you can even visit Tano-cho, Miyazaki City to see our daikon radishes being hung on towers from December to February.
